We all wish we could be working superheroes, but let’s face it, sometimes getting a gourmet meal on the table after a long day is just not going to happen. With one of these recipes i make often, though, you can have your meal and a happy family too.
Sometimes I get bored with the same old thing over and over for dinner so I decided to share some easy fun recipes.
Italian Eggplant
1 large eggplant
3 tablespoons extra-virgin olive oil, divided
1/2 pound ground beef
Salt and pepper to taste
1 onion, diced
1 red pepper, diced
3 cloves garlic, minced
1/2 cup fresh parsley, chopped
1/2 cup fresh basil, chopped
1-1/4 cup Pecorino Romano cheese, grated and divided
1/4 cup breadcrumbs
1 egg
2 tomatoes, chopped
Directions
- Heat oven to 350 degrees.
- Cut the eggplant in half and scoop out the center, leaving enough meat inside the skin so the eggplant holds its shape when baked. Boil the scooped-out center until soft, about 10 minutes.
- In a skillet, heat 1 tablespoon olive oil over medium heat. Season the beef with salt and pepper.
- Add the seasoned ground beef to the pan and saute until all of the liquid is evaporated and the beef begins to brown slightly.
- Drain well.
- Cool briefly and chop the cooked beef so that there are no large chunks of meat. In another pan over medium heat add the remaining 2 tablespoons olive oil and saute the onions, peppers, and garlic together.
- In a bowl combine the cooked eggplant, vegetables, cooked beef, parsley, basil, 1 cup of cheese, breadcrumbs, and egg.
- Fill the scooped-out eggplant halves with the mixture, dividing it evenly among the halves.
- Top with chopped tomatoes and the remaining grated cheese. Season with salt and pepper, place on an oiled tray and bake for 50
- minutes. Serve hot.

Zucchini Boats
4 medium zucchini, cut in half lengthwise; remove flesh and set aside to use later
I tablespoon olive oil
8 ounces sweet Italian sausage, crumbled
8 ounces hot Italian sausage, crumbled
1 clove garlic, minced
1 small onion, chopped
2 medium vine-ripened tomatoes, chopped
Kosher salt and black pepper to taste
1/2 cup Parmesan cheese, finely grated
1/2 cup mozzarella cheese, shaved
1/3 cup breadcrumbs
3 tablespoons fresh parsley, finely chopped
Directions
- Heat the oven to 400 degrees.
- With a teaspoon, scoop out the flesh from the interior of the zucchini so they resemble boats.
- Place the zucchini boats in a 9-inch-by-13-inch dish. Chop the removed zucchini flesh and place in a small bowl; set aside.
- In a skillet over medium heat, add the olive oil and heat through. Add the Italian sausages and cook for 5 minutes.
- Add the garlic, onion, chopped zucchini flesh, tomatoes, salt, and pepper. Cook 5 minutes.
- In a medium bowl, add the Parmesan, mozzarella, breadcrumbs, and parsley; stir to combine. Spoon the sausage mixture into the zucchini boats.
- Sprinkle the breadcrumb mixture over top of each and bake until golden, 15 to 20 minutes.
Tuscan Tomatoes
1-1/4 cups parsley, chopped
3 small cloves garlic, minced
Pinch of red pepper flakes
3/4 cup breadcrumbs
10 plum or beefsteak tomatoes (about 1-1/4 pounds total), cut in half
1/4 cup olive oil
1/2 cup water
Salt and pepper to taste
Directions
- Heat oven to 400 degrees.
- In a food processor or chopper, combine the parsley, garlic, red pepper flakes and breadcrumbs. Pulse until mixture is combined.
- Remove seeds and juice from the tomatoes. Using a spoon, fill the remain-
- ing tomato flesh with the breadcrumb mixture. Place the stuffed tomatoes in a shallow baking dish.
- Drizzle tomatoes with oil; season with salt and pepper. Add 1/2 cup water to the bottom of the baking dish.
- Cover dish tightly with foil.
- Bake tomatoes until they are tender and the stuffing has cooked through about 45 minutes.
- Turn on oven broiler.
- Remove baking dish from oven and remove aluminum foil. Broil until crisp and slightly browned 2 to 3 minutes.
