Print HOT & SPICY PEANUT BUTTER NOODLES Ingredients 5 tbsp crunchy peanut butter 1 tbsp dark soy sauce 1 tbsp rice wine vinegar 3 tbsp chili oil 1 tsp sesame oil 1 clove garlic finely grated 1 thumb-sized piece ginger finely grated 1 red chili finely sliced 400 g noodles 6 spring onions finely sliced 2 tbsp sesame seeds toasted Instructions Cook the noodles in boiling water until tender. Meanwhile, in a small saucepan over medium heat whisk together the peanut butter, soy sauce, rice wine vinegar, oils, garlic, and ginger until smooth. Loosen the mixture with a little water, adding a tablespoon at a time until you are left with a sauce. When it comes to a steady simmer, lower the heat and keep it warm. Drain the noodles and while they are still hot, toss through the peanut butter sauce. Add the chili, spring onions and sesame seeds and toss again. One Pan Peanut Butter Pasta Noodles Ingredients 8 oz. Linguini or Spaghetti 3 1/2 cups water 4 tablespoons soy sauce or tamari 2 tablespoons sesame oil 1 tablespoon balsamic or rice vinegar 1 heaping tablespoon peanut butter 4 scallions chopped 1 tablespoon sesame seeds Instructions Put all of the ingredients except the scallions and sesame seeds in your pan. If the pasta doesn’t fit your pan, break it in half. I used a 10.5 inch stainless steel skillet. Turn the heat to medium high. When the water comes to a boil, set the timer for 9 minutes. Every 30 seconds or so, use tongs or a pair of chopsticks to break up the peanut butter and stir the noodles around. Make sure they don’t stick to the bottom of the pan.
